以奈良油長酒造的旗艦實驗系列「ALPHA」為舞台，ALPHA 2 再進化，把菩提酛、超硬水與高精米徹底結合，展現風之森獨有的現代感與奈良古都釀造傳統。使用奈良縣都祁地區、中西農園栽培的減農藥秋津穂，並將米粒磨至22%的高精米水準，讓米本身的個性被簡化為純淨的旨味與質感，採用菩提酛酒母，讓傳統乳酸發酵帶來立體酸度與厚度，再以無濾過、無加水、約14度的輕盈酒精度呈現，保留原酒的張力同時保持易飲性

「笊籬採り」是油長酒造自行開發的上槽技術，運用笊籬狀裝置，在近乎無加壓的狀態下，自然汲取清酒，同時盡量隔絕空氣，以減少氧化與香氣揮散，讓香氣與口感層次更完整地被保留下來

他們的商品基本上全是無濾過・無加水・生酒、有著生酒獨有的層次豐富而細膩的質感、味道立體鮮明是風之森的特徴。
只使用自社研發的"7号酵母"。酒香自然、有時候像果實般的香味。


風之森美味的秘訣①、使用能以-10℃冷藏保存、強力的酒桶。
經常保持住最適合發酵的溫度、令低精米的酒的味道、高品質出品。

風之森美味的秘訣②、有極小的氣泡的一種特殊的水、「Ultra Fine Buble」水來洗米、把米裡面的多餘過礦物質或蛋白質除去、
就算精米步合80％的低精米也一樣優雅柔和、造出層次多變帶點複雑充滿立體感的酒。
