Sake brewing generally uses well water with higher hardness and lower water temperature than tap water and river water.Even with regard to iron, which is especially disliked for sake brewing, well water filtered into the stratum is truly the best way to make sake. Sugihara Sake Brewery uses the undercurrent water of the nearby Kaiikawa River. Microfiltered rice is used for washing rice, and carbon-filtered water is used for preparing water.
