In 2015, Ichiban started to prepare the Japanese gin project, hoping to present the taste of Japan to the public through gin; the material is centred on Kyoto, which is chosen because we believe that as long as we can get the approval of Kyoto people, who are strict with their mouths and have thousands of years of handcrafted techniques, we will be able to make it acceptable to the world.
Launched in mid-October 2016, Season's Beauty gin is made from rice, a neutral spirit, which is distilled into six categories: base (juniper berries, orris root, cypress flakes), citrus (yuzu, lemon), tea (yuzuru green tea), herbaceous (peppercorns and peppercorn sprouts), spicy (ginger), and floral (red shiso, manzanita), and then diluted in the notoriously purified fumigation water to 45.7% ABV; fumigation is a process that is not only a way of making the spirit, but also of making the gin. Fushimi's excellent water quality has led to a boom in sake brewing since the Muromachi period.
In a cross-border collaboration with the 400-year-old Japanese tangerine paper brand Mica Toshinaga, the design is incorporated into the black bottle with a copper-coloured pattern.
Kyoto Distillery was the first gin distillery in Japan and is currently the only distillery in Kyoto to have obtained a spirits certificate.
‘Seasonal Beauty’ means ‘the beauty of the four seasons’ and combines traditional Japanese aesthetics with the craftsmanship of gin, from distillation to blending and bottling, all of which are 100% Kyoto-made.
KI NOBI uses sake made from pure rice as the raw material for its spirits, and the unique taste of Japanese sake, which is both elegant and aromatic, provides KI NOBI with an excellent rounded and sweet flavour.
The water in Fushimi, Kyoto, has long been known for its purity, softness and sweetness.
Aroma: Citrus notes with a hint of juniper
Palate: Balanced and smooth, with a pronounced yuzu flavour, hints of pepper and herbal persistence, and a long finish.
