「紫八咫 2022」：這款貴釀酒有微微的氣泡，甜味和酸味介於「亞麻貓」和「陽乃鳥」之間。貴釀酒特有的蜂蜜般濃厚感依然存在，非常美味；並不像宣傳冊上所説的那樣酸味明顯。

「亞麻猫改 2023」：香氣中散發着蘋果、橙皮、野生蜂蜜和酸奶的甜美清新氣息。白色水果、富士蘋果和柑橘類的清新風味在口中柔滑地展開，隨着中段的味道變得複雜起來。葡萄柚皮般的鮮明酸味和草本的苦味為酒體增添了層次感，並引導到清爽的餘韻中。

這兩款酒與以下菜餚的搭配非常出色：海鮮薄片、生牡蠣、白身魚黃油煎（加點檸檬）、貝類和魷魚的烤制，以及各種油炸食物如炸物和天婦羅。此外，「亞麻貓」的乳酸能提升奶油醬汁、鮮奶酪和白黴奶酪的風味，而柑橘類的酸味則與新鮮的蔬菜和沙拉的醋汁相得益彰。

今年的頒佈會主題是PRIVATE LAB的實驗酒。

2022年的「紫八咫」繼承了高酸味型的2020年版本和將其生酒化的2021年版本，並實現了進一步的進化。回顧這一過程，2020年的版本由於具有酸度高、辛口的特點，從而避免了翌年版本在生酒化後可能出現的過度甜味。此外，2021年版本還成功抑制了一定程度的生酒特有的異味，這樣一來，不加熱的缺點得以避免，生酒的清新感得以長時間保持。在2022年版本中，為了進一步防止氧化，加入了新的工藝，通過瓶內二次發酵生成的二氧化碳氣體來保護酒體。這就是目前最新的「紫八咫」。

使用燒酒用白麴的「亞麻貓」是新政酒造中酸度最高的清酒。儘管如此，並不是酸度高就好。「亞麻貓」的目的是優美地表現酸味，平衡非常重要。如果無法與酒的其他各元素保持均衡，即使酸味再清澈也沒有意義。然而，有時釀酒師會想突破這些限制，嘗試極端地突顯酸味的酒。

「亞麻貓改」應運而生，為了創造全新的風格。「亞麻貓」的釀造過程中，單靠糖化力弱的白麴來溶解米是不容易的，不得不額外使用相當量的黃麴。然而，這款「亞麻貓改」幾乎沒有使用黃麴。減少黃麴的使用量是長期的課題，而這次（除酒母部分外）100%僅用白麴釀造是第一次實現的。之所以能實現這一點，是因為採用了日本酒釀造常識之外的發酵方式——在接近20度的高温下進行醪（もろみ）的發酵。
