Description

新政酒造的「Colors」系列，使用的原料米是1959年在東北農業試驗場培育出的「フクノハナ（福之花）」。這種酒米在秋田縣的「改良信交」之後一度廣泛種植，但隨後被「美山錦」取代，最終停止種植。

「フクノハナ」米具有較易溶解的特性，這次的釀造採用了無加壓袋吊法，將酒醪用酒袋懸吊，讓酒液在重力作用下自然滴落，形成了雫酒。這種釀造方式使得酒體的果實口味和柔和質感更加突出，帶來如同咬下多汁果實般的華麗印象。

使用「六號酵母」是新政的特色，此 COLORS 系列設定意為展現不同酒米特色，「秋櫻」代表改良信交，全量木桶生酛仕入，並經火入處理品質穩定，是經過酒造認可出貨海外之系列。因使用杉木桶發酵帶有淡雅的木質香氣，COLORS 目前也全系列升級曉鐘（Morning Bell）瓶身，為專屬於新政酒造使用之瓶形。

酒造介紹:

新政酒造

位於秋田縣的新政酒造創業於1852年，距今已有150多年的歷史。從創辦人佐藤卯兵衛到至今已繼承了八代。名字是取自明治天皇所頒布的施政大綱『新政厚德』。

現任第八代佐藤祐輔社長原本對清酒毫無興趣，是個不哲不扣的東大高材生，原本從事編輯、記者等工作，但是最終還是回到酒造繼承家業，從頭學習釀造清酒。原本身為外行人的他反而對清酒有著不同的見解，他在釀酒過程不加任何添加物，讓酒回歸純粹。

新政酒造是研發最古老清酒酵母「協會6號酵母」，不只是秋田的造酒廠而已更是將日本造酒技術近代化、是一間立了很多偉大功績的名酒造。
