Senkin Sake Brewery was founded in 1806 in Sakura City, Suzuki Prefecture, in the third year of the Late Edo Period (1806). The name ‘Senkin’ is derived from the meaning of ‘Tsuru’, a sacred bird enshrined to the Immortals, and has been passed down from generation to generation for more than 200 years. The current successor of the brewery, who is in his early 30s, inherited the brewery in 2003 and has made many policy changes based on his past experience as a competent sommelier. In the past, the sake brewed at Senkin had a light, spicy flavour and was not very different from the sake brewed at other sake breweries.
In order to brew their own original sake, they have started to use the original source of water, rice and yeast, and have started to brew sake with local flavours and characteristics. In addition to brewing sake, he is also committed to the cultural development and industrial revitalisation of the region, hoping to do his part for his hometown.
