Kaze no Mori, hailing from the Nara Imperial Palace, has always been renowned for breaking traditional brewing frameworks, and the Alpha series is a concrete example of the brewery's exploration of the "future possibilities of sake." This limited-edition Alpha 9, subtitled "The Bond of Wind and Fire," uses unfiltered, undiluted sake from Miroyo-fu, Ojama Village, Nara Prefecture, preserving its original and dynamic flavor structure. This year's version uses the rare and precious "Hinotori" rice shochu, aged for over ten years in the brewery's own barrels, adding a deeper layer and structure to the overall body.

In terms of aroma, the delicate vanilla notes imparted by the oak casks intertwine with ripe banana-like fruit and the characteristic ginjo aroma of sake, creating distinct and naturally pure layers. On the palate, Kaze no Mori's signature fine microbubbles unfold quickly and lightly. The mid-palate reveals a rounded texture similar to long-aged whisky, with both thickness and smoothness. The final section concludes with a rich, sweet flavor, then cleanly ends, leaving a long and elegant aftertaste.
