The "lazio-harvesting" method is an innovative filtration technique developed and independently researched by the Yucho Sake Brewery, inspired by the "lazio" sake brewing technique mentioned in brewing documents from the Muromachi to Edo periods. It involves placing a lazio-shaped (funnel-like) sieve in the mash, allowing it to slowly sink from the top of the brewing tank to the bottom under near-pressure-free conditions, relying solely on gravity. This partially separates the mash from the sake, preserving almost no loss of the mash's flavor. A major drawback of traditional bag-drip brewing was that the sake would oxidize upon contact with air after prolonged leakage, also losing aromatic components. The "lazio-harvesting" technique allows the sake to be filtered under near-pressure-free conditions without contact with surrounding air. This preserves the mash's flavor, prevents the loss of aromatic components, and avoids compromising its deliciousness.
