Signatory Vintage's Un-Chillfiltered range features a Scotch whisky from the small but charming Edradour Distillery. This Highland single malt is renowned for being particularly delicious when aged in sherry casks, and this 2014 vintage is a blissful combination of four first-fill oloroso sherry casks (44, 63, 153, and 154 casks) that spent ten years maturing before reaching 46% ABV. There is no extra colour. And, of course, no chill filtration.

Nose

Raspberry jam, currants, nutmeg, sherry oak, caramelised cream and cocoa powder.

Palate

Full-bodied sherry flavour with hints of sultanas, toffee pudding, orange peel, hazelnuts and cinnamon.

Finish

Victorian sponge and custard.
