Pure rice daiginjo polishing rate is 23%.

Using Yamada Nishiki, which has been polished to the limit of 23%, it has a gorgeous standing incense and a sweet honey-like sweetness when it is contained in the mouth, and after swallowing it, it cuts cleanly but lasts for a long time.It's different from common sense sake, and it's a really beautiful quality of sake.

Hot sake over 50 degrees is recommended.

“Dassai” literally means "otter festival". This is a word that was used long ago in our region, Yamaguchi Prefecture, as there were many otters frolicking in the nearby rivers.
