Catskills is Brooklyn Kura’s Junmai Daiginjo, brewed from 100% Yamada Nishiki grown in Arkansas and polished down to 50% for a super-premium, highly refined expression. Fermented with a single modern yeast and kept below 11°C throughout, it is designed to be delicate and luxurious while maintaining clarity and freshness. Named after the Catskill Mountains, the brewery’s water source, it grounds this sake in New York terroir while paying homage to classic Japanese daiginjo craft.
The nose shows fresh citrus, green apple and pear, layered with white flowers, tropical fruit tones and a subtle hint of vanilla. On the palate it is light-bodied and smooth, with fine, well-balanced acidity that carries gentle fruit sweetness into a creamy, polished finish. With an SMV around -2 and acidity about 1.6, it drinks soft and approachable—officially “Light & Dry,” yet quietly plush and inviting.
Serve chilled at white-wine temperatures (around 8–12°C) and pair with delicate dishes such as raw oysters, white fish crudo, or fresh cantaloupe and strawberries to highlight its clean fruit and texture.
