Mutsu Hachisen, with its innovative spirit, is challenging new frontiers in sake brewing by using shochu yeast for the first time. Previously, like other breweries, Mutsu Hachisen used shochu white koji to brew sake, utilizing the citric acid produced by the koji without adding brewing lactic acid. However, in this brewing challenge, Mutsu Hachisen adopted the Association's S-2 shochu yeast, complementing the white koji to achieve a perfect balance in sake quality.
