余市蒸餾所限定原酒 Peaty & Salty ,Woody & Vanillic ,Sherry & Sweet 於早年 Nikka 也推出了 5 款余市蒸餾所限定原酒, 十分稀有。而這 5 款酒不是以年份去定名, 而是以不同的口味而定名的 Key Malt Series。包括煙燻及淡淡的海洋氣息的 Peaty & Salty, 忌廉和厚朱古力香味的 Woody & Vanillic 以及果香及雪梨桶甜味的 Sherry & Sweet。餘下兩款分別為 Coffey Grain 的 Woody & Mellow 和蘋果白蘭地的 Fruity & Sweet。以味道作為主題, 是日本威士忌的一大創新。

Yoichi Single Malt是Nikka於1934年建立的第一個釀酒廠余市的一系列單一麥芽。創業者高鶴正孝之所以選擇北海道友一村，是因爲環境條件與蘇格蘭相似，在那裏學習釀製威士忌。

余市被描述爲大膽而強壯，帶有精煉的泥炭味和傳統的直接燃煤蒸餾帶來的煙霧。從石加里灣吹來的海風在成熟時給威士忌帶來了鹹味。
