Dewatsuru

① Raw rice

At Deba Tsuruga, sake brewing started when the Toji and Kurato were involved in the cultivation of sake and rice, and the cultivation of high-quality raw material rice was started.Taking advantage of the good local soil, we have established a rice wine cultivation association with local farmers, mainly brewers, and strive to grow stable and high-quality raw rice while polishing our cultivation techniques.

② Stocked water

Dewa crane's stocking water is natural groundwater from melting snow in the Dewa Hills.The water that seeps into the ground from the lush mountains and passes through several layers of stratum is refreshing and soft, forming the smooth, fine quality of liquor that is the characteristic of the crane.

③ A sake brewing policy

"The policy of making sake by Dewa Tsuruzo is ""Wajo Ryoshu."""This word has been handed down from generation to generation, and it means to create delicious sake that brings happiness to the drinkers by harmonizing the solidarity created by the breweries in the face of strict rice-making and sake-making work.
